Cheesy Baked Pasta
Serves 4-6, with leftovers
Adapted from 200 Really Easy Recipes, a Hamlyn All Colour Cookbook, by Louise Pickford
You will need a really big frying pan (we use as a wok-style pan), a large baking dish (such as a lasagne dish), and a big pot for cooking pasta.
500g dried pasta (penne or similar)
125g bacon, diced
1 onion finely chopped
1 clove garlic, crushed
300ml double cream
2 handfuls button mushrooms, quartered
250g grated mozzarella cheese
100g grated parmesan cheese
salt and pepper
Preheat the oven to 190C. Spray the baking dish with non-stick baking spray.
Cook the pasta, following packet directions, until al dente.
While the pasta is cooking, fry the bacon in the frying pan for 3-4 minutes until browned. Remove from the pan with a slotted spoon. Add the onion and garlic to the pan and cook gently for 5 minutes until soft.
Return the bacon to the pan with the onion and garlic and add the pasta, mushrooms, and cream, and salt and pepper to taste. Heat through for 2-3 minutes. Stir in the mozzarella cheese, remove from heat and stir until the cheese has melted.
Spoon the pasta mixture into the baking dish. Sprinkle with the parmesan and bake for 30-45 minutes, until browned and cooked through.
